Poetry Project

My teacher assigned this huge poetry project for winter vacation, and I was pretty excited about it cause I love writing but I need some help on one of the poems we must write. Here are the directions:

Write a poem celebrating ethnic diversity or the contributions of a particular ethinic group to American society.

I'm not so up to date on my ethnic diversity. I was thinking about maybe doing indians in like the 15-1600's but maybe that's not what my teacher would like. Any help thinking of a topic to write about with help me tons, thanks!
